Your graphics card sits behind a fan, a heatsink and a shroud, and somewhere underneath all of that is a layer of thermal paste pressed between the GPU die and the cooler. The GPU die is not perfectly flat, the cooler base is not perfectly flat, and thermal paste fills the microscopic gaps so heat can move from the chip into the heatsink. Over years that paste dries out, hardens, or "pumps out" from the centre under repeated heating and cooling cycles. As it degrades, the chip cannot shed heat as efficiently and core temperatures creep up.
